I found the recipe for no bake energy bites from Smashed Peas and Carrots I had everything I needed in the pantry so yesterday I decided to make them, with the following mods:
- we didn't use vanilla
- instead of peanut butter I used almond butter
- instead of a 1/2 cup of just ground flax I did 1/8 cup ground flax, 1/8 cup toasted sesame seeds, 1/4 cup wheat germ
- added 1/8 cup unsweetened cocoa powder
The results: all those eating solids in our home loved them, I think this makes a nice occasional treat! We ate all of them in two days, so clearly they are good! It felt good to make something from scratch for my family, and know each and every ingredient that went into them.
